They taste like mini brownie bites! This wonderful soul food is prepared in a silicone mini muffin pan so that you can load with a bite in your mouth. There is nothing more to say! This recipe is so delicious!
Before we jump into our favorite double chocolate chip mini muffins recipe I want to tell you briefly about a silicone mini muffin pan that has changed my life (literally, my kids ask for muffins 3 times per week).
Wave goodbye to those old metal muffin tins that lock themselves onto your muffins and cupcakes, and enjoy easy clean up after your muffins simply slide right out of the molds!
What's better than chocolate chip muffins? Double chocolate chip muffins! They taste like mini brownie bites! This wonderful soul food is prepared in our KPKitchen silicone mini muffin pan so that you can load with a bite in your mouth. There is nothing more to say! This recipe is so delicious!
In a separate bowl, use your KPKitchen liquid measuring cup and mix all the wet ingredients together until fully combined (vanilla extract, buttermilk and melted butter.) Note, if you don’t have buttermilk, see notes below.
Combine the wet ingredients with the dry ingredients and mix just until combined. Don’t over mix.
Next, fold in your mini chocolate chips.
Divide the batter evenly into each muffin cup, filling all the way to the top.
Bake for 20 minutes or until a tooth pick inserted comes out clean.
If you don’t have buttermilk you can make your own at home. Simply add 1 tablespoon of vinegar or lemon juice to your measuring cup and then add your milk until it reaches 1 Cup. Let sit for 5 minutes. And now you have buttermilk!
*When making your own buttermilk, whole milk works best. However, regular milk can be substituted.
